Ice-cream is a quintessential summer dessert, isn’t it? And what better way to treat yourself (and save some cash) than a quick and easy to make homemade ice-cream. Even the thought of this frozen delight in hot sunny days is enough to make us dream about it all the time. In addition, it’s very easy to make and most of the recipes require up to 5 ingredients. Easy No-Churn Ice-Cream Recipe

Follow this easy no-churn vanilla ice cream recipe for an authentic yet simple dessert made at home. Also, you can replace the sugar with honey or maple syrup in order to make it healthier. This ice cream recipe will be enough for 6 servings. 

What you need:

  • 600ml double cream
  • 250g caster sugar
  • 6 eggs, separated
  • 1/2-1 teaspoon pure vanilla extract

Start by whipping the eggs white. Then, take another bowl and whip the cream with the vanilla extract. In another bowl beat the egg yolks with sugar and add it to the cream mix. Keep beating until stiff. Add the egg whites, stir thoroughly and freeze for one day. Once done, leave the ice-cream out for 15 minutes before serving. You can add toppings such as fresh berries, chocolate syrup, brownies and more. 

2 Ingredients Ice-Cream Recipe

Did you know that you could make an ice cream with just 2 ingredients? According to Gemma’s Bigger Bolder Baking food blog, all you need is a high-fat Whipping/Double Cream and some sweetened condensed milk. If you didn’t know, condensed milk is simple cow’s milk without the water. This will make your ice cream softer and give its sweat flavour. In addition, you could buy a low-fat or fat-free condensed milk if you prefer to keep it healthier. 

In order to prepare your ice cream, start by whipping up the cold heavy cream for 2-3 minutes. Once you’re ready, add the cold condensed milk. In addition, you could add a vanilla extract to give your sweet treat that extra aroma and rich flavour. Plus, it will keep the ice-cream from freezing too hard. Add strawberries, chocolate chips, Oreo cookies or anything else you like and you will have multiple flavours, all ready in minutes. 

5-Minutes Frozen Yoghurt Recipe

If you’re looking for a healthier alternative to a regular ice cream, go for Greek frozen yoghurt. Our favourite recipe is from Just a Taste and all you need is 4 ingredients and 5 minutes. The best part is this healthy frozen yoghurt delight is customisable and you can add any flavour you like. 

What you need:

  • 4 cups of frozen fruits of your choice
  • ½ cup any Greek yoghurt
  • 2 teaspoons of vanilla extract
  • 3 tablespoons of honey

Combine all ingredients in a bowl and start blending. It’s best to use a food processor or a blender and process the mixture for about 5 minutes. Your frozen yoghurt will be ready to serve immediately or alternatively you could store in the freezer until ready to eat.

Vegan Chocolate Ice-Cream Recipe

Enjoy this delicious creamy vegan ice-cream from Minimalist Baker at the comfort of your home! Plus, you don’t even need an ice-cream maker to prepare it. What’s more, this recipe requires just 5 simple ingredients and 30 min of your time. 

What you need:

  • 1.4 ml coconut milk or full-fat cream
  • 32g cacao powder or unsweetened cocoa
  • 60 ml almond milk
  • 200g dates
  • ½ tsp vanilla extract

Start by adding the dates to a food processor or chop into small pieces. Then, add them to a bowl with hot water and leave until a thick paste forms. Take another bowl and mix the coconut cream/milk and whip with a mixer until it’s smooth. Afterwards, add the cocoa powder, almond milk, date paste and the cocoa powder. Blend everything together. Taste and add flavours as you wish. For instance, you could add a bit of espresso and cinnamon. Transfer to a container and leave in the freezer overnight. Enjoy! 

Dairy-Free Ice-Cream Recipe

Our favourite non-dairy ice-cream recipe is from Jamie Oliver. His “dairy-free twist on classic vanilla ice cream” is super tasty and easy to make. In addition, you can customise it by adding your favourite  flavours. For example add fruits, cookies, nuts, chocolate chips and more. 

What you need:

  • 2 vanilla pods
  • 1 teaspoon vanilla-bean paste
  • 1 x 400 g tin of light coconut milk
  • 300 ml unsweetened organic soya milk
  • 165 g agave syrup

Start by cutting the vanilla pods in half, lengthways, and add them to a large bowl. Add the vanilla-bean paste, coconut milk, soya milk and the agave syrup. Then, blend everything together until a creamy mixture is formed. If you have an ice-cream maker you will need to churn for 40 minutes. However, if you don’t have one, once the mixture is ready, simply transfer into a large container and leave in  the freezer for 4 hours, stirring occasionally. 

How to store homemade ice-cream?

The best way to make sure your ice-cream stays fresh is to use a freezer-safe airtight container. The most popular ones are the flat containers as they take up less space and are easy to scoop from. You can also add a layer of plastic wrap before the top as this will prevent the forming of ice crystals. In addition, it’s recommended to keep your homemade ice-cream at the back of your freezer and not in the door. Also, most ice-creams are good for 4-6 weeks when stored properly. Bon appetit!
