- 600ml double cream
- 250g caster sugar
- 6 eggs, separated
- 1/2-1 teaspoon pure vanilla extract
Start by whipping the eggs white. Then, take another bowl and whip the cream with the vanilla extract. In another bowl beat the egg yolks with sugar and add it to the cream mix. Keep beating until stiff. Add the egg whites, stir thoroughly and freeze for one day. Once done, leave the ice-cream out for 15 minutes before serving. What you need:
- 1.4 ml coconut milk or full-fat cream
- 32g cacao powder or unsweetened cocoa
- 60 ml almond milk
- 200g dates
- ½ tsp vanilla extract
Start by adding the dates to a food processor or chop into small pieces. Then, add them to a bowl with hot water and leave until a thick paste forms. Take another bowl and mix the coconut cream/milk and whip with a mixer until it’s smooth. Afterwards, add the cocoa powder, almond milk, date paste and the cocoa powder. Blend everything together. Taste and add flavours as you wish. For instance, you could add a bit of espresso and cinnamon. Transfer to a container and leave in the freezer overnight. Enjoy!

What you need:
- 2 vanilla pods
- 1 teaspoon vanilla-bean paste
- 1 x 400 g tin of light coconut milk
- 300 ml unsweetened organic soya milk
- 165 g agave syrup
Start by cutting the vanilla pods in half, lengthways, and add them to a large bowl. Add the vanilla-bean paste, coconut milk, soya milk and the agave syrup. Then, blend everything together until a creamy mixture is formed. If you have an ice-cream maker you will need to churn for 40 minutes. However, if you don’t have one, once the mixture is ready, simply transfer into a large container and leave in the freezer for 4 hours, stirring occasionally.
How to store homemade ice-cream?
The best way to make sure your ice-cream stays fresh is to use a freezer-safe airtight container. The most popular ones are the flat containers as they take up less space and are easy to scoop from. You can also add a layer of plastic wrap before the top as this will prevent the forming of ice crystals.
